  • 1-2 pieces jalapeños adjust for spice level
  • 1 cup all-purpose flour gluten-free option available
  • 1 large egg can be replaced with flax egg or applesauce
  • 1 teaspoon baking powder
  • to taste salt
  • to taste pepper
  • ½ cup oil for frying vegetable or canola oil

Preparation Steps
  1. Finely chop 1-2 jalapeños and place them in a mixing bowl. Drain liquid from canned corn and add 1 cup of sweet corn.
  2. In a separate bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking powder, and pinch of salt and pepper.
  3. Crack and beat 1 large egg in another bowl. Add the corn and jalapeño mixture, stirring until well-coated.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Heat ½ inch of oil in a large skillet over medium heat until shimmering.
  6. Drop spoonfuls of batter into the skillet, frying for 3-4 minutes on each side until golden-brown.
  7. Remove and drain on paper towels. Serve warm with dipping sauces.
