Preparation Steps
- Finely chop 1-2 jalapeños and place them in a mixing bowl. Drain liquid from canned corn and add 1 cup of sweet corn.
- In a separate bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking powder, and pinch of salt and pepper.
- Crack and beat 1 large egg in another bowl. Add the corn and jalapeño mixture, stirring until well-coated.
- Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Heat ½ inch of oil in a large skillet over medium heat until shimmering.
- Drop spoonfuls of batter into the skillet, frying for 3-4 minutes on each side until golden-brown.
- Remove and drain on paper towels. Serve warm with dipping sauces.
