  • 1 pound Bacon Cook until crispy and crumble for topping.
  • 16 ounces Rotini Pasta Cook until al dente.
  • 16 ounces Cream Cheese Soften before use.
  • 1 cup Sour Cream Greek yogurt can be used as substitute.
  • 1 cup Milk Whole milk works best.
  • 2 cups Mexican Cheddar Jack Shredded Cheese Reserve some for topping.
  • 6 Jalapeno Peppers Deseeded and diced.
  • 6 Green Onions Thinly sliced.
For the Topping
  • Additional Cheddar Jack Cheese Reserved for topping.
  • Crumpled Bacon Reserved for topping.
  • Sliced Jalapeno Peppers Reserved for garnish.
  • Sliced Green Onions Reserved for garnish.

Method
 

Step-by-Step Instructions
  1. Prepare the casserole dish by greasing a 12 x 9-inch casserole dish with non-stick cooking spray. Preheat the oven to 350°F.
  2. Cook the rotini pasta according to the package directions in a large pot of salted boiling water. Drain when al dente.
  3. In a large skillet, cook the chicken and bacon over medium heat for 8-10 minutes until the chicken is no longer pink and the bacon is crispy. Remove and cool slightly.
  4. Prepare the fresh ingredients by dicing jalapenos and slicing green onions. Set aside.
  5. In a medium mixing bowl, whisk together softened cream cheese, sour cream, and milk until smooth. Stir in shredded cheese, jalapenos, and most green onions.
  6. Transfer the cooked rotini pasta to the greased casserole dish, followed by the chicken and bacon mixture. Pour the creamy mixture over the top and fold together.
  7. Sprinkle the remaining shredded cheese, crumbled bacon, jalapeno slices, and green onion slices on top.
  8. Bake in the preheated oven for 20 minutes until the cheese is melted and bubbly.
