  • 2 tablespoons Sugar or honey
  • 2 ¼ teaspoons Active Dry Yeast
  • 2 cups Bread Flour
  • 1 cup All-Purpose Flour
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil or melted butter
Filling Ingredients
  • 1 cup Raspberry Preserves or other fruit preserves
Glaze Ingredients
  • 1 cup Confectioners' Sugar with water for consistency

Method
 

Dough Preparation
  1. In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large bowl, combine the yeast mixture with bread flour, all-purpose flour, salt, and olive oil. Mix until a sticky dough forms.
  3. Transfer the dough to a greased bowl, cover with a towel and let it rise for about 1 hour or until it doubles in size.
  4. Gently punch down the dough, move it to a greased pan, and shape it to fit while creating a slight border.
  5. Cover again and let it rise for another hour.
  6. Preheat the oven to 425°F while the dough rises.
  7. Poke dimples in the dough and fill them with raspberry preserves.
  8. Bake for 18-22 minutes until golden brown and hollow-sounding when tapped.
  9. After baking, refill dimples with more preserves for added sweetness.
  10. Whisk together confectioners' sugar with water for a glaze and drizzle over warm focaccia.
  11. Cool slightly before slicing and serve warm.
