- Peel your very ripe bananas and break them into a large mixing bowl. Using a fork or a potato masher, mash the bananas until they are completely smooth.
- Add plain flour, sugar, vanilla extract, nutmeg, ground cinnamon, and a pinch of salt to the mashed bananas. Stir until it forms a soft, pancake-batter-like paste.
- In a frying pan, pour enough cooking oil to cover the bottom—about 1/2 inch deep. Heat over medium heat to reach around 350°F (175°C).
- Using a tablespoon, scoop portions of the banana batter and drop them into the hot oil. Fry for 3-4 minutes on each side until golden brown and crisp.
