Step‑by‑Step Instructions for Jamaican Banana Fritters
  1. Peel your very ripe bananas and break them into a large mixing bowl. Using a fork or a potato masher, mash the bananas until they are completely smooth.
  2. Add plain flour, sugar, vanilla extract, nutmeg, ground cinnamon, and a pinch of salt to the mashed bananas. Stir until it forms a soft, pancake-batter-like paste.
  3. In a frying pan, pour enough cooking oil to cover the bottom—about 1/2 inch deep. Heat over medium heat to reach around 350°F (175°C).
