  • 2 large Eggs Plus 4 egg whites; can substitute with ¾ cup liquid egg whites.
  • 2 cups Superfine Blanched Almond Flour Ensure it’s superfine for the right texture.
  • 1 tablespoon Aluminum-Free Baking Powder Opt for aluminum-free for optimal flavor.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Blend 1 cup of full-fat cottage cheese, 2 large eggs, and 4 egg whites until smooth.
  3. In a bowl, whisk together 2 cups of superfine blanched almond flour and 1 tablespoon of aluminum-free baking powder.
  4. Pour the wet mixture into the dry ingredients and fold until just combined.
  5. Transfer the batter to the prepared loaf pan and smooth the top.
  6. Bake for 60-70 minutes until golden brown and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
