For the Salad
  • 2 cups Shredded Chicken Breast Cooked and shredded
  • 1 cup Cottage Cheese Blend for smoother consistency
  • 2 stalks Celery Diced, optional
  • 1/2 cup Green Onions Sliced
  • 1 cup Shredded Cheddar Cheese Can substitute with pepper jack
  • 1/2 cup Chopped Fresh Jalapeno Adjust for desired heat level
  • 1 cup Bacon Crispy, can use turkey bacon
  • 1/2 cup Sour Cream Optionally substitute with Greek yogurt
  • 1/4 cup Fresh Cilantro Can substitute with parsley
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Salt
  • 2 tablespoons Juice of Lime
For the Dressing
  • 1/2 cup Sour Cream Optionally substitute with Greek yogurt
  • 2 tablespoons Lime Juice
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder

Method
 

Instructions
  1. Cook the chicken breast using your preferred method until cooked through, then shred into bite-sized pieces.
  2. Dice the celery, slice the green onions, and chop the jalapenos into small pieces.
  3. In a large bowl, combine shredded chicken, diced celery, green onions, jalapenos, and bacon. Mix in cottage cheese and shredded cheddar until well combined.
  4. In a food processor, blend the sour cream, lime juice, garlic powder, and onion powder until smooth and creamy.
  5. Drizzle the dressing over the salad mixture and toss until evenly coated.
  6. Serve the salad on its own, in wraps, or on a bed of mixed greens, garnishing with extra jalapenos or cilantro if desired.
