  1. Begin by patting the cod fillets dry using paper towels to ensure a perfect sear. Season both sides generously with salt and pepper.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Allow the oil to heat up until it shimmers.
  3. Carefully place the seasoned cod fillets in the hot skillet. Sear for 2–3 minutes on each side until golden brown.
  4. Reduce the skillet temperature to medium and add 3 tablespoons of unsalted butter. Allow the butter to melt and foam.
  5. Once the butter is melted, add 3 minced garlic cloves to the skillet. Sauté for about 30 seconds until fragrant.
  6. Stir in 2 tablespoons of fresh lemon juice and 1 teaspoon of lemon zest. Allow the mixture to bubble and cook for about 1 minute.
