- Begin by patting the cod fillets dry using paper towels to ensure a perfect sear. Season both sides generously with salt and pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Allow the oil to heat up until it shimmers.
- Carefully place the seasoned cod fillets in the hot skillet. Sear for 2–3 minutes on each side until golden brown.
- Reduce the skillet temperature to medium and add 3 tablespoons of unsalted butter. Allow the butter to melt and foam.
- Once the butter is melted, add 3 minced garlic cloves to the skillet. Sauté for about 30 seconds until fragrant.
- Stir in 2 tablespoons of fresh lemon juice and 1 teaspoon of lemon zest. Allow the mixture to bubble and cook for about 1 minute.
- Return the seared cod to the skillet, spoon some sauce over it and let it simmer for an additional 2–3 minutes.
- Remove from heat once the cod flakes easily with a fork. Sprinkle with 2 tablespoons of chopped fresh parsley and serve immediately.
