Method
 

Preparation
  1. Begin by washing and peeling your large russet potatoes. Cut them into thick fries or wedges to ensure a satisfying bite.
  2. Place the cut fries into a large bowl filled with cold water to prevent browning and to remove excess starch.
  3. Allow the cut fries to soak in the cold water for at least 30 minutes.
Dipping Sauce
  1. In a medium bowl, combine mayonnaise, hot sauce, lemon juice, garlic powder, and onion powder. Mix well until smooth and creamy.
  2. Adjust the hot sauce amount according to your preferred spice level.
Frying
  1. In a deep fryer or large pot, heat your vegetable oil to 350°F (175°C).
  2. Dry the soaked fries thoroughly using paper towels.
  3. Fry the fries in small batches, for about 5-7 minutes or until golden brown and crispy.
  4. Transfer them to a plate lined with paper towels to drain excess oil.
  5. While the fries are still hot, immediately sprinkle with salt, black pepper, and Cajun seasoning.
  6. Toss gently to ensure even seasoning coverage.
Serving
  1. Transfer the seasoned fries to a serving bowl and top with shredded cheese, chopped parsley, and green onions if desired.
  2. Serve alongside the zesty dipping sauce.
