Step-by-Step Instructions
- In a large pan or Dutch oven, heat 2 tablespoons of oil over medium-high heat.
- Add 1 pound of ground beef along with 1 chopped sweet onion and 1 chopped orange bell pepper to the pan. Sauté until beef is browned and onion is translucent, about 5–7 minutes.
- Stir in 3 cloves of minced garlic. Sauté for an additional minute until garlic is fragrant.
- Pour in one can of fire roasted diced tomatoes along with 1 teaspoon of smoked paprika, 1 teaspoon of dried oregano, salt, and pepper to taste. Cook for another 2–3 minutes.
- Gently layer 4 cups of chopped green cabbage over the beef mixture without stirring. Cover the pan and cook for 15–20 minutes.
- Once the cabbage is tender, sprinkle 1 cup of shredded cheddar or jack cheese on top. Cover and let sit for about 5 minutes.
- Carefully uncover and give everything a gentle stir to combine. Serve warm.
