Step-By-Step Instructions for Mango Mochi
  1. In a microwave-safe bowl, combine glutinous rice flour, fresh mango puree, sugar, water, and a pinch of salt. Stir until smooth.
  2. Cover the bowl and microwave on high for 1 minute. Remove, stir, and microwave for an additional minute until thickened.
  3. Transfer the hot mochi dough onto a corn starch dusted plate and cool in the refrigerator for about 30 minutes.
  4. Once cooled, dust the work surface with corn starch. Divide the dough into 8 pieces, flatten each, and place a chunk of mango in the center. Pinch to seal.
  5. Place finished Mango Mochi on a dusted plate and serve immediately, or store in an airtight container.
