- Cook a large pot of salted water to a boil, add 8 oz of pasta, and cook until al dente, about 8-10 minutes. Drain and set aside.
- Season chicken breasts with salt and pepper. In a skillet, heat 2 tbsp of olive oil over medium-high heat and sear chicken for 3-4 minutes each side until golden brown.
- In the same skillet, reduce to medium heat and add minced garlic. Sauté for 30 seconds until fragrant, then add sun-dried tomatoes and cook for another minute.
