- Preheat your oven to 400°F (200°C).
- Drizzle olive oil into your baking dish, using a brush or paper towel to grease the bottom evenly.
- Pat fish fillets dry and season with salt, black pepper, and sprinkle dried oregano.
- In a skillet, heat a tablespoon of olive oil; add onions and sauté for 5 minutes until translucent. Then add bell peppers and zucchini, cooking for another 3–4 minutes. Stir in minced garlic and cook for an additional minute.
- Transfer the sautéed vegetables into the greased baking dish, spreading them evenly across the bottom.
- Place the seasoned fish fillets on top of the vegetable layer. Arrange halved cherry tomatoes, sprinkle fresh parsley and dill, and drizzle with lemon juice and zest.
- Cover your baking dish tightly with aluminum foil and bake for 20 minutes.
- After 20 minutes, remove the foil and return to the oven, baking for an additional 5–10 minutes until fish flakes easily with a fork.
- Let cool for a few minutes, garnish with fresh herbs, and serve with lemon wedges.
