Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Drizzle olive oil into your baking dish, using a brush or paper towel to grease the bottom evenly.
  3. Pat fish fillets dry and season with salt, black pepper, and sprinkle dried oregano.
  4. In a skillet, heat a tablespoon of olive oil; add onions and sauté for 5 minutes until translucent. Then add bell peppers and zucchini, cooking for another 3–4 minutes. Stir in minced garlic and cook for an additional minute.
  5. Transfer the sautéed vegetables into the greased baking dish, spreading them evenly across the bottom.
  6. Place the seasoned fish fillets on top of the vegetable layer. Arrange halved cherry tomatoes, sprinkle fresh parsley and dill, and drizzle with lemon juice and zest.
  7. Cover your baking dish tightly with aluminum foil and bake for 20 minutes.
  8. After 20 minutes, remove the foil and return to the oven, baking for an additional 5–10 minutes until fish flakes easily with a fork.
  9. Let cool for a few minutes, garnish with fresh herbs, and serve with lemon wedges.
