  • 8 ounces short pasta (rotini or penne) opt for short pasta shapes
  • 1 cup grape tomatoes halved
  • 1 cup cucumbers diced, seedless preferred
  • 1/4 cup red onion finely chopped
  • 2 cups baby spinach rinsed and dried
  • 1/2 cup green olives sliced
  • 1/2 cup black olives sliced
  • 1 cup feta cheese crumbled
For the Dressing
  • 1/4 cup Greek salad dressing adjust to taste

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions, about 8-10 minutes, until al dente. Drain and rinse with cold water.
  2. Wash and chop grape tomatoes, cucumber, and red onion. In a large bowl, combine all vegetables.
  3. Add cooled pasta to the bowl with vegetables and gently toss to combine.
  4. Drizzle Greek salad dressing over the salad and toss again to coat evenly.
  5. Crumble feta cheese over the salad and gently fold it in. Season with salt and pepper if desired.
  6. Serve immediately or cover and chill for at least 30 minutes before serving.
