  • 1 cup Spinach fresh or frozen, thawed and squeezed
  • 1 cup Feta Cheese can substitute with goat cheese
  • 1 cup Mozzarella Cheese can substitute with Monterey Jack
  • 1 medium Red Onion finely chopped
Tortilla Ingredients
  • 4 pieces Tortillas whole wheat or gluten-free alternatives
Cooking Ingredients
  • 2 tablespoons Olive Oil can substitute with butter

Method
 

Preparation Steps
  1. In a bowl, combine spinach, feta, mozzarella, and red onion. Mix thoroughly and set aside.
  2. Lay out tortillas, spoon filling on one tortilla, and cover with another. Press down gently.
  3. Heat skillet over medium heat, add olive oil and warm until shimmering.
  4. Place quesadilla in skillet, cook for 3-5 minutes until golden brown, flip and cook the other side.
  5. Remove from skillet, let sit for a minute, then slice into wedges and serve warm.
