- Preheat your oven to 400°F (200°C).
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the finely diced onion and minced garlic, sauté for 3-5 minutes until soft and fragrant. Then, add sausage meat, dried sage, thyme, salt, and pepper. Cook for 5-7 minutes until everything is combined and browned.
- Roll out the thawed puff pastry on a floured surface to a rectangular shape, about 1/4 inch thick.
- Take the cooled sausage filling and place a line along one edge of the puff pastry. Roll tightly and seal the edges. Brush the seam with egg wash.
- Cut the rolled pastry into individual rolls, approximately 2-3 inches long. Arrange on a lined baking sheet, brushing the tops with egg wash.
- Bake in the preheated oven for 20-25 minutes or until golden-brown and puffed-up.
- Cool for a few minutes on the baking sheet before serving warm with mustard or cranberry sauce.
