  • 1 Onion (finely diced) Shallots or leeks can be used for a milder taste.
  • 2 cloves Garlic (minced) Fresh or powdered garlic works well.
  • 1 tsp Dried Sage Oregano or rosemary can be substituted.
  • 1 tsp Dried Thyme Fresh thyme can also be used.
  • 1 tsp Ground Black Pepper Consider white pepper for milder flavor.
  • 1 tsp Salt Use kosher or sea salt for best results.
For the Pastry
  • 1 sheet Puff Pastry Ensure it's properly thawed before use.
  • 1 large Egg (for egg wash) Milk or cream can be used for a similar effect.
For Sautéing
  • 1 tbsp Olive Oil Canola oil or butter are good substitutes.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the finely diced onion and minced garlic, sauté for 3-5 minutes until soft and fragrant. Then, add sausage meat, dried sage, thyme, salt, and pepper. Cook for 5-7 minutes until everything is combined and browned.
  3. Roll out the thawed puff pastry on a floured surface to a rectangular shape, about 1/4 inch thick.
  4. Take the cooled sausage filling and place a line along one edge of the puff pastry. Roll tightly and seal the edges. Brush the seam with egg wash.
  5. Cut the rolled pastry into individual rolls, approximately 2-3 inches long. Arrange on a lined baking sheet, brushing the tops with egg wash.
  6. Bake in the preheated oven for 20-25 minutes or until golden-brown and puffed-up.
  7. Cool for a few minutes on the baking sheet before serving warm with mustard or cranberry sauce.
