Method
 

Dough Preparation
  1. Heat whole milk until lukewarm. Dissolve fresh yeast in milk, then combine with sugar, flour, eggs, and salt in a stand mixer. Mix for 5 minutes, then gradually add butter and mix for 8-10 minutes until smooth.
  2. Transfer dough to an oiled bowl, cover, and let rise in a warm place for about 1 hour until doubled in size.
Filling and Rolling
  1. Whisk together brown sugar, softened butter, and cinnamon until smooth to prepare the filling.
  2. Punch down dough, roll into a 5 mm thick rectangle, spread filling evenly, and roll tightly into a log.
Cutting and Second Rise
  1. Cut the rolled log into 12 equal sections and place in a lined baking tray. Cover and let rise for 45 minutes.
Baking
  1. Preheat oven to 190ºC (375ºF). Bake rolls for 22-25 minutes, covering with foil in the last 5 minutes to prevent over-browning.
Frosting Preparation
  1. Beat together softened cream cheese and butter until fluffy, gradually adding powdered sugar.
Serving
  1. Spread cream cheese frosting over warm rolls, serve while warm.
