Step-by-Step Instructions
  1. Begin by placing two thick slices of sourdough bread in a cold frying pan. Spread a generous layer of butter on the top side of each slice.
  2. Flip the bread to have the buttered sides facing down. Layer 3-4 thin slices of mozzarella cheese evenly over each slice.
  3. Spread a heaped tablespoon of basil pesto over the mozzarella on both slices.
  4. Sprinkle some chopped sun-dried tomatoes and crispy bacon over the pesto if desired.
  5. Add another layer of mozzarella cheese over the toppings to enhance cheesiness.
  6. Carefully place a second slice of sourdough bread on top and press down gently.
  7. Spread butter generously on the top slice of bread before cooking.
  8. Heat your pan on medium heat and cook the sandwich for about 3-4 minutes on each side until golden brown.
  9. Flip the sandwich gently and cook for another 3-4 minutes until crispy.
  10. Remove the sandwich from the pan and let it cool for a minute before cutting.
