Preparation
- In a large bowl, whisk together olive oil, lime juice, soy sauce, Mexican chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and honey until well combined.
- Cut the boneless, skinless chicken breasts into 1-inch cubes and add them to the bowl with the marinade.
- Stir well to ensure each piece is fully coated in the marinade. Cover and refrigerate for at least 1 hour.
- Preheat your grill to medium-high heat, aiming for about 375–400°F.
Grilling
- Take the soaked wooden skewers and thread the marinated chicken pieces onto them.
- Place the assembled skewers on the preheated grill and cook for about 10–15 minutes, turning occasionally.
- Remove the skewers from the grill and allow them to rest for about 5 minutes before serving.
- Sprinkle freshly chopped cilantro over the skewers and serve alongside lime wedges.
