  • 1 pound boneless, skinless chicken breast can substitute with tofu for vegetarian option
  • 2 tablespoons olive oil can substitute with avocado oil
  • 2 tablespoons lime juice fresh preferred
  • 2 tablespoons soy sauce substitute with tamari for gluten-free
  • 1 tablespoon Mexican chili powder substitute with paprika and cayenne if unavailable
  • 1 teaspoon ground cumin coriander can offer different flavor profile
  • 1 teaspoon smoked paprika regular paprika can be used but with less depth
  • 1 teaspoon garlic powder fresh garlic can be substituted
  • 1 teaspoon onion powder fresh onion can be substituted
  • 1 tablespoon honey maple syrup or agave nectar can be used
For Assembly
  • 8 pieces wooden skewers soak in water before use
  • 1 cup fresh cilantro optional
  • 2 pieces lime wedges serve alongside

Method
 

Preparation
  1. In a large bowl, whisk together olive oil, lime juice, soy sauce, Mexican chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and honey until well combined.
  2. Cut the boneless, skinless chicken breasts into 1-inch cubes and add them to the bowl with the marinade.
  3. Stir well to ensure each piece is fully coated in the marinade. Cover and refrigerate for at least 1 hour.
  4. Preheat your grill to medium-high heat, aiming for about 375–400°F.
Grilling
  1. Take the soaked wooden skewers and thread the marinated chicken pieces onto them.
  2. Place the assembled skewers on the preheated grill and cook for about 10–15 minutes, turning occasionally.
  3. Remove the skewers from the grill and allow them to rest for about 5 minutes before serving.
  4. Sprinkle freshly chopped cilantro over the skewers and serve alongside lime wedges.
