  • 1 teaspoon Cinnamon Nutmeg or pumpkin spice can be swapped for a different zest.
  • 1/2 teaspoon Salt Use sea salt or kosher salt for best results.
For Coating
  • 1 large Egg White Aquafaba or a flax egg are great alternatives.
  • 1 tablespoon Water This is not necessary if using an egg substitute.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium-sized bowl, whisk together the brown sugar, white sugar, cocoa powder, cayenne pepper, cinnamon, and salt until well blended.
  3. In a large mixing bowl, beat the egg white and water together until frothy, about 2-3 minutes.
  4. Add your choice of nuts to the frothy egg white mixture and gently stir to evenly coat.
  5. Carefully fold the spice mixture into the nuts until every piece is well coated.
  6. Spread the coated nuts in a single layer across the prepared baking sheets and bake for 10 minutes.
  7. After 10 minutes, remove the sheets from the oven, stir the nuts, and switch the positions of the baking sheets. Return to the oven for another 10 minutes.
  8. Allow the nuts to cool completely on the sheets before transferring to an airtight container.
