Step-by-Step Instructions
  1. Preheat your grill to medium heat, around 350°F (175°C).
  2. Rinse the cauliflower under cool water, and trim off the leaves to create a flat stem.
  3. Slice the cauliflower into four thick, even steaks, about 1 to 1.5 inches thick.
  4. Brush both sides of each cauliflower steak with mild tasting oil.
  5. Grill the steaks directly on the grates for about 5-6 minutes, then flip and repeat.
  6. For softer cauliflower, move to indirect heat and cook for another 10 minutes.
  7. Remove steaks, brush with mayonnaise, sprinkle with chili powder and top with cotija cheese and cilantro.
  8. Squeeze lime juice over steaks before serving.
