Step-by-Step Instructions
  1. Prepare the Fruit: In a medium bowl, toss strawberries and blueberries with sugar, cornstarch, cinnamon, and lemon zest. Let sit for 10 minutes.
  2. Prepare Pie Crust: Preheat oven to 400°F. Roll out pie crust and cut circles approximately 4.5 inches in diameter.
  3. Assemble Galettes: Line a baking sheet with parchment paper. Spoon about 1/4 cup fruit mixture into center of each crust circle.
  4. Create Edge: Fold the edges of the crust over the filling, pinching to seal and create a rustic shape.
  5. Add Egg Wash: Beat an egg and brush the crust edges. Sprinkle with sugar.
  6. Bake: Bake for 25-30 minutes until crust is golden brown.
  7. Serve: Allow to cool slightly, then serve warm with whipped cream or ice cream.
