- Preheat your oven to 375°F (190°C) and prepare a 9x5 inch loaf pan by spraying it with non-stick cooking spray or lining with parchment paper.
- In a large mixing bowl, thoroughly mash the overripe bananas until smooth. Add the almond milk, melted vegan butter, maple syrup, baking powder, baking soda, and vanilla extract. Stir until well combined.
- Gradually add the all-purpose flour and almond flour, stirring until a thick batter forms. Gently fold in the blueberries.
- Pour the batter into the prepared loaf pan and bake for about 50 minutes, until the top is golden brown and a toothpick inserted comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack. Optionally frost with a mixture of vegan cream cheese, melted butter, and powdered sugar.
