  • 1 cup almond flour Can be swapped with more all-purpose flour if needed.
  • 1 cup fresh or frozen blueberries Use fresh when they are in season.
Optional Topping/Frosting
  • 1/4 cup vegan cream cheese For an indulgent frosting.
  • 1 cup powdered sugar Adjust to taste when making.
  • 2 tablespoons melted vegan butter Can be substituted with coconut oil.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a 9x5 inch loaf pan by spraying it with non-stick cooking spray or lining with parchment paper.
  2. In a large mixing bowl, thoroughly mash the overripe bananas until smooth. Add the almond milk, melted vegan butter, maple syrup, baking powder, baking soda, and vanilla extract. Stir until well combined.
  3. Gradually add the all-purpose flour and almond flour, stirring until a thick batter forms. Gently fold in the blueberries.
  4. Pour the batter into the prepared loaf pan and bake for about 50 minutes, until the top is golden brown and a toothpick inserted comes out clean.
  5. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack. Optionally frost with a mixture of vegan cream cheese, melted butter, and powdered sugar.
