- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans, dusting them with flour.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt for 30 seconds to ensure a uniform mixture.
- Add eggs, milk, oil, and vanilla to the dry ingredients and mix on medium speed with an electric mixer for 2 minutes until smooth.
- Stir in hot coffee (or hot water) until just combined; the batter will be thin which will ensure a moist cake.
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes, then run a knife around the edges and invert onto a wire rack to cool completely.
- To make the frosting, beat the heavy cream until creamy, then add powdered sugar, cocoa, and vanilla, blending until fluffy.
