Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 9×5 inch loaf pan.
- In a large mixing bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, salt, and ground nutmeg.
- In another bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until well-combined.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in the grated zucchini and any optional nuts.
- In a small bowl, mix the flour, brown sugar, granulated sugar, and ground cinnamon for the streusel topping, then cut in the cold butter.
- Pour the batter into the prepared loaf pan and sprinkle the streusel topping evenly over the batter.
- Bake for 50-60 minutes, or until a skewer comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
