Preparation Steps
- Step 1: Prepare the vegan passion fruit curd by combining ingredients in a saucepan over low heat, stirring continuously until thickened. Refrigerate until ready. Reserve 200g for filling.
- Step 2: Soak cashews in water for at least 4 hours or use a quick-soak method, then drain and rinse.
- Step 3: Blend vegan cookies, vegan butter, and sea salt in a food processor until the mixture resembles wet sand. Press into a lined 9" loaf pan and refrigerate while preparing the filling.
- Step 4: Blend reserved passion fruit curd, soaked cashews, vegan cream cheese, Greek yogurt, and vanilla until smooth. Pour into the crust and refrigerate for at least 6 hours to set.
- Step 5: Gently heat remaining passion fruit curd until spreadable, then pour over the cheesecake and smooth. Refrigerate for an additional hour.
- Step 6: Slice with a hot knife and serve chilled alongside fresh fruit or vegan whipped cream.
