Method
 

Preparation Steps
  1. Start by lining an 8 or 9-inch square pan with parchment paper.
  2. In a blender, combine the chopped fresh strawberries and unsweetened applesauce and blend until smooth.
  3. Transfer the strawberry-applesauce puree into a heat-proof bowl. Sprinkle the unflavored gelatin powder over the top and stir well.
  4. Gently heat the gelatin mixture using a double boiler while stirring until completely dissolved.
  5. Pour the cooled gelatin mixture into a stand mixer bowl and beat on high for about 15 minutes.
  6. Carefully pour the mixture into the prepared pan and smooth the top.
  7. Place the pan in the refrigerator and allow it to chill for at least 1 hour.
  8. Once set, lift the cake out of the pan and cut into squares.
