Preparation Steps
- Start by lining an 8 or 9-inch square pan with parchment paper.
- In a blender, combine the chopped fresh strawberries and unsweetened applesauce and blend until smooth.
- Transfer the strawberry-applesauce puree into a heat-proof bowl. Sprinkle the unflavored gelatin powder over the top and stir well.
- Gently heat the gelatin mixture using a double boiler while stirring until completely dissolved.
- Pour the cooled gelatin mixture into a stand mixer bowl and beat on high for about 15 minutes.
- Carefully pour the mixture into the prepared pan and smooth the top.
- Place the pan in the refrigerator and allow it to chill for at least 1 hour.
- Once set, lift the cake out of the pan and cut into squares.
