Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C). Gather all your ingredients.
  2. Line an 8x8-inch baking dish with parchment paper and spray with oil.
  3. Chop half of the almonds and mix with pumpkin seeds, sunflower seeds, coconut flakes, salt, and cinnamon.
  4. In another bowl, whisk together the vanilla extract, honey (or maple syrup), and melted coconut oil.
  5. Fold the wet mixture into the dry ingredients until combined.
  6. Pour the mixture into the prepared dish and press down firmly.
  7. Bake for 35-40 minutes until edges are golden brown.
  8. Allow to cool in the dish for about an hour before slicing.
  9. Store in an airtight container.
