Step-by-Step Instructions for Oatmeal Green Smoothie Waffles
  1. In a blender, pulse 2 cups of rolled oats, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1 teaspoon of ground cinnamon until the oats reach a flour-like consistency. Transfer to a medium bowl and set aside.
  2. In the same blender, combine 2 mashed ripe bananas, 2 eggs, 1/4 cup of melted coconut oil, 1/4 cup of maple syrup or honey, 1 cup of fresh spinach, and 1 teaspoon of pure vanilla extract. Blend until smooth.
  3. Add the dry oat mixture back into the blender with the wet ingredients. Blend together until fully combined, ensuring no dry ingredients are left.
  4. Preheat your waffle iron according to manufacturer’s instructions. Lightly grease if necessary. Pour about 1/2 cup of the batter onto the hot iron. Cook for 4-6 minutes until golden brown and crispy.
  5. Carefully remove waffles from the iron. Serve warm topped with fresh fruit, maple syrup, or yogurt. Alternatively, cool completely and store in an airtight container.
