- Preheat your oven to 400°F (200°C).
- Prepare a baking sheet by lightly greasing it with olive oil or lining it with parchment paper.
- Remove any wilted outer leaves from the cabbage, then slice it into ¾-inch thick rounds.
- In a small bowl, mix olive oil, garlic powder, smoked paprika, onion powder, thyme, salt, and black pepper.
- Brush the oil and spice mixture onto both sides of each cabbage steak.
- Place the cabbage steaks on the baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, flipping halfway through.
- Once done, sprinkle with optional toppings if desired.
