Step-by-Step Instructions
  1. Preheat the oven to 160°C (fan) or 170°C (conventional).
  2. Slice the peaches into bite-sized pieces and combine them with raspberries and caster sugar in a mixing bowl. Toss the fruits until the sugar coats them evenly and transfer to a baking dish.
  3. In a separate bowl, whisk together the plain flour, baking powder, and caster sugar. Cut the cold butter into small cubes and rub it into the flour mixture until it resembles coarse crumbs. Gradually add milk while mixing until a soft, slightly sticky dough forms.
  4. Spoon the cobbler topping over the fruit in the baking dish evenly. Optionally sprinkle demerara sugar and flaked almonds on top.
