Preparation
- Preheat your oven to 350°F (180°C) and prepare a 9x13-inch pan.
- In a food processor, combine flour, sugar, and salt; add cold butter and pulse until coarse crumbs form.
- Reserve 1½ cups of the crumb mixture for the topping and press the remaining crumbs into the pan to form the crust.
- Bake the crust for about 15 minutes until lightly golden.
- Mix brown sugar into the reserved crumb mixture and set aside.
- In a bowl, combine sugar, flour, cinnamon, and a pinch of salt, then fold in the peaches.
- Whisk heavy cream and vanilla together, then pour over peaches and stir until combined.
- Pour the peach filling over the crust and add the streusel topping over it.
- Bake for 45 minutes until bubbly and golden brown on top.
- Allow to cool completely and chill for at least 2 hours before slicing.
