Ingredients
  

For the Crust and Topping
  • 2 cups all-purpose flour or gluten-free flour if needed
  • 1 cup granulated sugar half can be replaced with brown sugar
  • 1/2 teaspoon salt
  • 1 cup cold unsalted butter cut into cubes
  • 1/2 cup brown sugar dark brown sugar for richer flavor
For the Filling
  • 4 cups peaches chopped, can substitute with apples or nectarines
  • 1 cup heavy cream or half-and-half for a lighter option
  • 1 teaspoon ground cinnamon optional nutmeg can be added
  • 1 teaspoon vanilla extract optional but recommended

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C) and prepare a 9x13-inch pan.
  2. In a food processor, combine flour, sugar, and salt; add cold butter and pulse until coarse crumbs form.
  3. Reserve 1½ cups of the crumb mixture for the topping and press the remaining crumbs into the pan to form the crust.
  4. Bake the crust for about 15 minutes until lightly golden.
  5. Mix brown sugar into the reserved crumb mixture and set aside.
  6. In a bowl, combine sugar, flour, cinnamon, and a pinch of salt, then fold in the peaches.
  7. Whisk heavy cream and vanilla together, then pour over peaches and stir until combined.
  8. Pour the peach filling over the crust and add the streusel topping over it.
  9. Bake for 45 minutes until bubbly and golden brown on top.
  10. Allow to cool completely and chill for at least 2 hours before slicing.
