- Start by bringing the chicken to room temperature for even cooking. Pat it dry with a paper towel to ensure the rub sticks well.

- In a mixing bowl, combine kosher salt, garlic powder, smoked paprika, chili powder, onion powder, and freshly ground black pepper. Rub this mixture all over the chicken, ensuring to work it under the skin.

- Set up your grill for a two-zone fire: preheat one side to high heat (around 400°F) and leave the other side off for indirect cooking.

- Place the seasoned chicken on the cooler side of the grill and close the lid. Let it cook for about 30 to 35 minutes, flipping every 10 minutes until the internal temperature reaches 160°F to 165°F.
