  • 1 package Cheese Tortellini Store-bought or homemade
  • 1 lb Beef Substitute with portobello mushrooms for a vegetarian option
For the Vegetables
  • 2 medium Caramelized Onions Ensure they're golden brown
  • 1 cup Bell Peppers Use any color
For the Sauce
  • 4 oz Cream Cheese Use ricotta for a tangy twist
  • 1 cup Cheddar Cheese Swap for provolone for the true cheesesteak experience
Seasonings
  • 1 tsp Garlic Powder Fresh garlic can be used
  • 1 tsp Onion Powder Optional seasoning

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, about 3-5 minutes. Drain and reserve a cup of pasta water.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add sliced onions and chopped bell peppers, and sauté for 5-7 minutes until caramelized.
  3. Add the beef to the skillet and cook until browned, about 5 minutes.
  4. Lower the heat and stir in the cream cheese and a splash of reserved pasta water until creamy.
  5. Fold the drained tortellini into the skillet and cook for an additional 2-3 minutes over low heat until heated through.
  6. Serve hot and garnish with fresh parsley and red pepper flakes.
