Step-by-Step Instructions for Raspberry Swirl Cookies
  1. Preheat your oven to 350°F (175°C). Cream the room-temperature butter and granulated sugar together until light and fluffy.
  2. Add one egg and vanilla extract to the creamed mixture. Mix until smooth.
  3. Sift in all-purpose flour, powdered sugar, and salt. Stir gently until just combined, forming a soft dough.
  4. Prepare the raspberry swirl by warming the jam or puréeing fresh raspberries. Optionally mix in sugar for sweetness.
  5. Roll out the dough to 1/4 inch thick and spread an even layer of raspberry over it.
  6. Roll the dough into a log, wrap in plastic, and chill for at least 1 hour.
  7. Slice the chilled log into 1/2 inch rounds and place on a parchment-lined baking sheet. Bake for 10-12 minutes.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
