For the Salad
  • 4 cups Watermelon cubed, cold
  • 2 cups Strawberries sliced
  • 1 large Cucumber sliced into half-moons
  • 1 cup Feta Cheese crumbled
  • 1/4 cup Fresh Mint chopped
For the Vinaigrette
  • 2 tablespoons Lemon Juice fresh
  • 3 tablespoons Olive Oil extra virgin
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Pepper freshly cracked

Method
 

Preparation
  1. Wash the strawberries and mint under cold water. Remove stems and slice strawberries into quarters. Cut watermelon into bite-sized cubes and cucumber into thin half-moons.
  2. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper until emulsified.
  3. Combine watermelon, cucumber, and strawberries in a large mixing bowl. Gently fold in crumbled feta cheese.
  4. Drizzle the vinaigrette over the salad and lightly toss to coat well.
  5. Sprinkle chopped fresh mint on top before serving. Let the flavors meld for a few minutes before enjoying.
