  • 4 cups Watermelon Use seedless for ease.
  • 2 cups English Cucumber Can substitute with Persian cucumber.
  • 1 cup Feta Cheese Use crumbled tofu for a vegan option.
  • ¼ cup Fresh Mint Leaves Substitute with basil if needed.
For the Dressing
  • 1 whole Fresh Lime Use lemon as substitute if unavailable.
  • Sea Salt Start with a small pinch.
  • Black Pepper Freshly ground is best.

Method
 

Instructions
  1. Cube the watermelon into bite-sized cubes and transfer to a large bowl.
  2. Slice the cucumber into thin rounds and add to the watermelon.
  3. Cube the feta cheese and sprinkle over the salad.
  4. Chop the mint leaves and add to the mixture.
  5. Zest and juice the lime, drizzling both over the salad.
  6. Sprinkle sea salt and black pepper to taste.
  7. Gently toss the ingredients together without mashing the watermelon.
  8. Taste and adjust seasoning before serving.
