Steps to Prepare
  1. Preheat your oven to 325°F (163°C). Grease a 9x13 baking pan.
  2. In a bowl, whisk together all-purpose flour and powdered sugar. Cut in cold butter until resembling coarse crumbs. Press into the pan and bake for 15 minutes.
  3. Beat eggs in the same bowl, then stir in granulated sugar, salt, and flour. Mix until smooth. Optionally add ground cinnamon.
  4. Fold in the diced rhubarb and pour the mixture over the pre-baked crust.
  5. Bake for approximately 60 minutes until the center is set and the top is golden.
  6. Cool completely in the pan and slice into squares for serving.
