For the Onion Dijon Sauce
  • 3 tablespoons butter or margarine for a dairy-free option
  • 2 tablespoons minced fresh onion or shallot
  • 1 tablespoon Dijon mustard adjust to taste
  • 0.5 teaspoon minced fresh garlic or 0.25 teaspoon dried granulated garlic
For Garnish
  • chives or parsley optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and prepare a baking sheet lined with parchment paper or a silicone mat.
  2. Cut the cabbage into 4-5 wedges, keeping part of the core intact, and place them on the baking sheet.
  3. Drizzle olive oil over each wedge and sprinkle salt and pepper to taste.
  4. Roast the cabbage for 20-25 minutes, flipping halfway through.
  5. Combine butter, minced onion, Dijon mustard, and garlic in a saucepan and heat until melted.
  6. Serve the roasted cabbage with the warm onion-Dijon sauce drizzled on top, garnished with chives or parsley.
