Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare cherry tomatoes and garlic.
  2. Toss cherry tomatoes with olive oil, salt, pepper, and red pepper flakes.
  3. Spread seasoned tomatoes on a baking sheet, placing garlic alongside, and drizzle with olive oil.
  4. Roast in the oven for 25-30 minutes until tomatoes burst and garlic turns golden.
  5. Boil a large pot of salted water and cook spaghetti according to package instructions.
  6. Reserve 1 cup of pasta cooking water, then drain the cooked pasta.
  7. Mash roasted garlic and tomatoes in a bowl, combining with olive oil and juices from the baking sheet.
  8. Mix cooked pasta with the tomato-garlic mash and add reserved pasta water as needed.
  9. Fold in torn fresh basil and adjust seasoning as needed.
  10. Serve topped with grated Parmesan and a drizzle of balsamic vinegar if desired.
