- In a large mixing bowl, combine unsalted butter, oil, brown sugar, and honey. Cream on medium speed for 1 minute until smooth.
- Lower speed and add egg and vanilla. Mix until combined without over-mixing.
- Gradually sift in flour, baking soda, salt, and cinnamon. Mix on low speed until dough comes together.
- Form dough into balls and place on baking sheets. Cover and refrigerate for at least 1.5 hours.
