Step-by-Step Instructions
  1. In a large mixing bowl, combine unsalted butter, oil, brown sugar, and honey. Cream on medium speed for 1 minute until smooth.
  2. Lower speed and add egg and vanilla. Mix until combined without over-mixing.
  3. Gradually sift in flour, baking soda, salt, and cinnamon. Mix on low speed until dough comes together.
  4. Form dough into balls and place on baking sheets. Cover and refrigerate for at least 1.5 hours.
  5. Preheat oven to 350°F (175°C).
  6. Bake cookies for about 10 minutes until edges are set and lightly browned.
  7. Sprinkle fleur de sel on warm cookies. Let cool slightly before transferring to a wire rack.
