For the Tacos
  • 8 pieces Corn or Flour Tortillas gluten-free if needed
  • 2 cups Red Cabbage shredded
  • 1/2 cup Fresh Cilantro chopped
  • 2 pieces Avocado sliced
  • 1 cup Diced Tomatoes or Salsa seasonal tomatoes preferred
  • 1/2 cup Sour Cream vegan or regular
  • 1 piece Lime for juice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, combine cauliflower florets with olive oil, garlic, smoked paprika, cumin, chili powder, salt, and black pepper.
  3. Spread the seasoned cauliflower on the baking sheet and roast for 25-30 minutes, turning halfway through.
  4. While the cauliflower roasts, prepare the toppings: shred cabbage, slice avocado, chop cilantro, and have salsa ready.
  5. Warm the tortillas in a skillet for about 30 seconds on each side to keep them pliable.
  6. Assemble the tacos by filling tortillas with roasted cauliflower, cabbage, cilantro, avocado, tomatoes or salsa, and sour cream, then add lime juice.
