Step-by-Step Instructions
  1. Heat a large skillet over medium heat. Add olive oil and butter. Let butter melt.
  2. Add diced baby potatoes to the skillet. Season with salt, pepper, rosemary, and thyme. Cook for 10-12 minutes until tender and crispy.
  3. Remove potatoes and keep warm while cooking steak.
  4. Add more butter to the skillet, increase heat, and sear steak bites for 2-3 minutes on each side.
  5. Lower heat and add garlic, sauté for 30 seconds.
  6. Combine steak and potatoes in the skillet, toss to coat in garlic butter.
  7. Garnish with fresh parsley and serve warm.
