  • 1 cup Broth Use vegetable broth for vegan version.
  • 1 tablespoon Cornstarch Use arrowroot if avoiding gluten.
  • 2 tablespoons Sesame Oil Substitute with any neutral oil if unavailable.
For the Beans
  • 3 cloves Garlic Finely chopped.
  • 1 pound Green Beans Chinese long beans can be used as an alternative.
  • 2 tablespoons Peanut Oil Any high-heat oil will work.

Directions
  1. Start by trimming the ends of your green beans and wash them thoroughly under cold water. Then, dry them with a clean kitchen towel to remove excess moisture. Meanwhile, finely chop your garlic and set it aside.
  2. In a large wok or a heavy skillet, pour in about 2 tablespoons of peanut oil and heat it over high heat until it shimmers, about 2 minutes.
  3. Carefully add the prepared green beans to the hot oil, spreading them out evenly. Stir-fry them for about 5-7 minutes until they become bright green and blistered.
  4. While the beans are frying, prepare the sauce by mixing soy sauce, broth, cornstarch, and sesame oil in a small bowl. Stir until the cornstarch dissolves completely.
  5. Once your green beans are blistered, push them to one side of the wok. Pour the prepared sauce into the empty side of the pan, stirring continuously for 1-2 minutes until the sauce thickens.
  6. After the sauce has thickened, give everything a gentle toss to combine, then transfer the beans to a serving dish. Serve immediately over warm jasmine rice.

Notes

Measure and chop all ingredients before starting to cook. Use high heat for blistering the beans. Cook garlic just before the sauce to avoid burning.
