- Season the chicken breasts with salt and pepper. Heat a skillet over medium heat and add olive oil. Cook the chicken for 6-7 minutes on each side until golden brown and no longer pink.
- In a large pot, bring salted water to a boil and add elbow macaroni. Cook according to the package instructions until al dente, about 8-10 minutes. Drain and set aside.
- Melt butter in a saucepan over medium heat. Add flour and stir for 1 minute. Gradually whisk in milk, garlic powder, and onion powder. Cook for 3-4 minutes until the sauce thickens.
- Lower the heat and add sharp cheddar and mozzarella cheese to the sauce. Stir until both cheeses melt completely. Adjust seasoning with salt and pepper if needed.
- Combine the cooked macaroni and shredded chicken with the cheese sauce. Pour in BBQ sauce and stir until well combined. If too thick, add reserved pasta water to adjust consistency.
- Serve the BBQ Chicken Mac and Cheese warm. Optionally, drizzle additional BBQ sauce on top and enjoy!
