Method

Step-by-Step Instructions
  1. Season the chicken breasts with salt and pepper. Heat a skillet over medium heat and add olive oil. Cook the chicken for 6-7 minutes on each side until golden brown and no longer pink.
  2. In a large pot, bring salted water to a boil and add elbow macaroni. Cook according to the package instructions until al dente, about 8-10 minutes. Drain and set aside.
  3. Melt butter in a saucepan over medium heat. Add flour and stir for 1 minute. Gradually whisk in milk, garlic powder, and onion powder. Cook for 3-4 minutes until the sauce thickens.
  4. Lower the heat and add sharp cheddar and mozzarella cheese to the sauce. Stir until both cheeses melt completely. Adjust seasoning with salt and pepper if needed.
  5. Combine the cooked macaroni and shredded chicken with the cheese sauce. Pour in BBQ sauce and stir until well combined. If too thick, add reserved pasta water to adjust consistency.
  6. Serve the BBQ Chicken Mac and Cheese warm. Optionally, drizzle additional BBQ sauce on top and enjoy!
