- Cut the chicken thighs into 1-inch cubes and place them in a large mixing bowl.
- In a separate bowl, whisk together soy sauce, honey, vegetable oil, rice vinegar, minced garlic, ground ginger, black pepper, and optional red pepper flakes.
- Pour the marinade over the chicken and toss until evenly coated. Cover and refrigerate for at least 1 hour.
- Preheat the grill to medium-high heat, about 400°F. If using wooden skewers, soak them now.
- Thread marinated chicken pieces onto the skewers, leaving space between each piece.
- Grill the skewers for 10-12 minutes, turning occasionally, until chicken is cooked through at 165°F.
- Remove from grill and let rest for a few minutes before serving.
