For the Wraps
  • 4 pieces Tortillas Gluten-free tortillas can be used
  • 2 tablespoons Butter For grilling, use olive oil or vegan butter as alternatives

Step-by-Step Instructions
  1. Prep Veggies: Chop the bell peppers, onion, zucchini, celery, and mushrooms into uniform pieces. Combine in a mixing bowl.
  2. Seasoning: Drizzle veggies with olive oil, sprinkle salt, and garlic powder. Toss until well-coated.
  3. Air Frying: Preheat air fryer to 390°F. Place seasoned veggies in basket and cook for 12 minutes, shaking halfway.
  4. Add Spinach: Stir in fresh spinach and cook for an additional minute until wilted.
  5. Assemble Wraps: Lay out tortillas and distribute roasted veggies in center. Roll tightly.
  6. Grill: Preheat panini grill on medium-high heat. Brush wraps with butter or oil and grill for 2-3 minutes until golden brown.
