- Season the boneless chicken breasts with salt, pepper, and preferred herbs. Let rest for about 10 minutes.
- In a skillet over medium heat, cook the thick-cut bacon until crispy, about 6-8 minutes. Transfer to a plate.
- Using the reserved bacon fat, cook the seasoned chicken breasts for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F. Let rest for 5 minutes before slicing.
- In a mixing bowl, combine mayonnaise, minced garlic, and fresh herbs. Stir well and season to taste.
- Toast slices of sourdough bread in the skillet until golden, about 2-3 minutes per side.
