Method
 

Step-by-Step Instructions
  1. Season the boneless chicken breasts with salt, pepper, and preferred herbs. Let rest for about 10 minutes.
  2. In a skillet over medium heat, cook the thick-cut bacon until crispy, about 6-8 minutes. Transfer to a plate.
  3. Using the reserved bacon fat, cook the seasoned chicken breasts for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F. Let rest for 5 minutes before slicing.
  4. In a mixing bowl, combine mayonnaise, minced garlic, and fresh herbs. Stir well and season to taste.
  5. Toast slices of sourdough bread in the skillet until golden, about 2-3 minutes per side.
  6. Spread garlic herb mayo on one side of each toasted bread slice. Layer with lettuce, tomato, sliced chicken, and bacon. Top with another slice of bread, mayo side down, and slice in half to serve.
