Method
 

Instructions for Mexican Chicken Flatbread
  1. Preheat your oven to 425°F (220°C).
  2. Line your baking sheet with parchment paper. Spread red enchilada sauce over the pizza crust or flatbreads.
  3. Sprinkle shredded mozzarella cheese, followed by shredded Colby jack cheese over the sauced flatbread.
  4. Add shredded chicken, diced red onion, and corn kernels evenly on top.
  5. Place the flatbread in the oven and bake for 8-10 minutes until the cheese is melted and edges are crispy.
  6. Remove from oven and let cool for 5 minutes. Garnish with fresh cilantro and crumbled queso fresco.
  7. Combine the mayonnaise, lime juice, and chili powder to make the Elote sauce. Mix until smooth.
  8. Slice the flatbread into wedges and drizzle with Elote sauce. Serve warm.
