Instructions for Mexican Chicken Flatbread
- Preheat your oven to 425°F (220°C).
- Line your baking sheet with parchment paper. Spread red enchilada sauce over the pizza crust or flatbreads.
- Sprinkle shredded mozzarella cheese, followed by shredded Colby jack cheese over the sauced flatbread.
- Add shredded chicken, diced red onion, and corn kernels evenly on top.
- Place the flatbread in the oven and bake for 8-10 minutes until the cheese is melted and edges are crispy.
- Remove from oven and let cool for 5 minutes. Garnish with fresh cilantro and crumbled queso fresco.
- Combine the mayonnaise, lime juice, and chili powder to make the Elote sauce. Mix until smooth.
- Slice the flatbread into wedges and drizzle with Elote sauce. Serve warm.
