  • 2 tablespoons vegetable oil or canola/sunflower oil
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 medium green bell pepper
  • 3-4 cloves garlic minced
  • 2-3 tablespoons soy sauce low-sodium or tamari for gluten-free
  • 1 tablespoon oyster sauce or vegetarian oyster sauce
  • 1 tablespoon cornstarch optional
  • 1 tablespoon sesame oil or omit for a lighter version

Method
 

Step‑by‑Step Instructions
  1. Wash your bell peppers under cold water and slice them into thin strips. Mince the garlic.
  2. In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
  3. Add the shrimp and stir continuously for 3-4 minutes until they turn pink and opaque. Set aside.
  4. In the same skillet, add the sliced bell peppers and minced garlic. Stir-fry for 3-5 minutes.
  5. Return the shrimp to the skillet, pour in the soy and oyster sauces, and mix thoroughly.
  6. Stir for an additional minute, then season with salt and pepper to taste.
  7. Serve immediately over rice or noodles.
