  • 500 grams Pork Mince can substitute with ground beef, turkey, or chicken
  • 1.5 tablespoons Neutral Oil canola, vegetable, or peanut oil
For the Flavor Base
  • 1 tablespoon Minced Ginger fresh preferred
  • 3 cloves Minced Garlic double for more flavor
  • 1 piece Fresh Red Chili Pepper can substitute with red bell pepper or omit
  • 2 tablespoons Shallots or red onions
For the Sweet & Savory Sauce
  • 3 tablespoons Brown Sugar adjust to taste
  • 2 tablespoons Vietnamese Fish Sauce taste as you go
  • 1 tablespoon Lime Zest
  • 2 tablespoons Lime Juice fresh is best
For Garnish
  • 2 tablespoons Scallions can use only green tops
  • to taste Salt
  • to taste Black Pepper

Cooking Steps
  1. Heat 1.5 tablespoons of neutral oil in a large skillet over high heat. Once shimmering, add the minced pork and let it sear undisturbed for 1 minute. Season with salt and black pepper, allowing it to brown for another 4 minutes. The pork should develop a nice golden crust; transfer it to a colander to drain excess fat.
  2. In the same skillet, add the remaining oil and reduce the heat to medium. Toss in the shallots and sauté for 1 minute until fragrant and translucent. Next, add the minced ginger and fresh red chili pepper, stirring for another minute, and finally incorporate the minced garlic, cooking for just 15 seconds until fragrant.
  3. Return the browned pork to the skillet, ensuring it’s well mixed with the aromatics. Sprinkle in the brown sugar and drizzle with the Vietnamese fish sauce, stirring the mixture together. Let it cook undisturbed for about 2 minutes, allowing caramelization to develop.
  4. Stir in the chopped scallions, lime zest, and lime juice. Give everything a quick toss to combine, enhancing the delightful appeal of your Vietnamese Caramelized Pork Bowls.
